The orange peel extract (OE) is an additive material that has been used widely as a natural antioxidant source and bioactive compounds in Pharmaceutical food sector. poor stability degradation of this were considered problems the industry. New technologies have introduced recently to prevent encapsulation.
 In work, chitosan (CS) Prunus avium gum (PG) proposed promising based materials for encapsulation OE via ionic gelation method. effect different ratios CS: PG on efficiency (EE %) capsules size investigated. EE% CS-PG was ranged from 60.63 87.06 % with range 40 95nm according Atomic Force Microscope (AFM) images. formulation highest chosen be characterized by FTIR, scanning electron microscope (SEM), vitro release study. FTIR spectra confirm cross-linking between NH3+ group CS negative functional (-COO-) PG. According SEM micrographs, showed spongy porous structure. study indicated matrix acidic neutral medium 55.15 52.67% respectively after incubation 240 minutes. This found can effective wall encapsulating delivering it into gastrointestinal system.
